12 Jun Crab Linguine with Chilli & Garlic
400g linguine pasta
150g crab meat
2 chilli peppers, seeds removed, finely chopped
2 garlic cloves, peeled and crushed
Juice of 1 lemon
Salt & pepper
Fresh parsley, finely chopped
In a frying pan, saute the garlic and chilli peppers in some olive oil until golden and fragrant.
Add the crab meat and cook for 5 minutes until piping hot. Stir in the lemon juice and season with salt and pepper.
In a large pot, cook the pasta in some salted water for about 8 minutes until al dente.
Reserve a cup of starchy water. Drain the pasta and toss it with the crab sauce adding the reserved water.
Season with salt and pepper. Drizzle with some olive oil and garnish with chopped fresh parsley.
